Originating from La Palma, a village in the district of Colasay in Peru’s north, our latest addition is packed full of almond brittle, milk chocolate, sweet lemon and creamy flavours. Geographically, the region has a mountainous terrain crisscrossed by rivers and farms producing coffee between 1700 and 2000 metres above sea level (masl), ideal growing conditions for varieties with some very special flavour profiles.
Most of the coffee producers in the region grow Caturra, Costa Rica 95 and Castillo varieties, picked and processed by the producers themselves, fermented for 24 to 36 hours and then dried on tarpaulin mats.
