Notes from Fika Coffee Roasters: Cup score of 88!! Biftu Gudina means “ray of development”. The cooperative was established in 2012 and is located in the Agaro – Goma district within the Jimma zone. There are about 150 smallholders in total. The co-op benefits from high altitude and rich fertile soils.
The coffee is processed using the washed method. The cherries are sorted by hand so that the unripe fruit can be discarded before entering the hopper that feeds the eco-pulper. The beans are then soaked in clean water for eight hours, sun-dried for 10 to 14 days on raised beds and carefully hand sorted again. With intense florals and notes of lime peel, IPA and nectarine, this is a classic.
