Our rarebreed rolled shoulder produces a tender, succulent roasting joint. The shoulder is more fatty than the leg as its a harder working muscle, but with its marbled meat produces a tender, juicy cut with a real delicous flavour. Covered with a layer of scored skin ensuring you’ll get a cruncy crackling. Pulled pork shoulder can be used in many dishes, this requires slowly roasting the joint until the meat just falls apart so you can pull it.
